Following a very successful series of workshops - including an 11-participant workshop through Comox Valley Literacy Now - David Rotsztain (passionate cheese-maker) generously agreed to share his personal cheese handbook with us.

Enjoy.

I enjoyed the cheese workshop yesterday, David was very informative and easy to learn from.
Looking forward to other interesting food related sessions LUSHvalley might present.

PS we are building a pizza/bread cob oven so the Bocconcini/Mozzerella cheese will be yummy on those pizzas!!!

Hi… great time making cheese yesterday, thank you! I’ve got a kefir baby for david but I’m unsure of whether I’ll make it into town today.

The workshop was really great, David is a fountain of knowledge re: the cheesemaking process and his presentation was very well done. The charge of $25 was very reasonable for what was presented.

Thanks,
